JUDI'S WALDORF MINI-MUFFINS
This recipe is adapted from Judi Remigio, who used to facilitate our Parent and Child Session years ago. Each day this recipe is made, it comes out a little different, depending on what flour you use, how many helpers you have, and the whimsy of the day. Thank you to Shannon Aitken, our current Parent and Child facilitator, for the many, many times she has made these eagerly anticipated mini-muffins for Snack!
2 cups flour (organic kamut, quinoa, wheat, rice, or spelt)
1 tsp. sea salt (optional)
1 tsp. baking soda (or sprinkle of baking powder, whatever you have)
1/2 cup raisins (optional)
1 TBSP vanilla extract
1/2 cup honey
1 & 3/4 cups liquid, we use a combination of rice milk and sunflower oil, you could include yogourt, melted butter, applesauce or mashed banana, or egg)
a dash of cinnamon and/or nutmeg
-combine all ingredients in a large bowl until just mixed (little helpers love adding the measured ingredients and stirring alongside you!)
-scoop into oiled tins and "wish it well"
-bake 25 minutes or until golden in a preheated 350 oven
makes about 2 dozen
Serve with cut up fruit, and friends! And we thank you for your light, to-day...
